Enter ingredient quantities as percentages

In Foodworks, you can enter your recipe as either weight-based or percentage-based. Percentage quantities in recipes are a way to measure ingredients based on their proportion to the total recipe.

Creating a new recipe with percentage-based quantities: 

  1. Create a recipe.
  2. On the Ingredients tab, click the Percentage-based quantities toggle.

  3. Add ingredients to the recipe and enter the quantities as a percentage. 

Once you are satisfied with this draft, click Publish.

Adding percentage-based quantities to an existing recipe: 

  1. Open the recipe.
  2. Click Edit.
  3. On the Ingredients tab, click the Percentage-based quantities toggle.

  4. The ingredients in the recipe will automatically change to percentages. 

Once you are satisfied with this draft, click Publish.

Understanding balancing percentages

One of the ingredients in the recipe will take the role of being the balancing percentage. The balancing percentage is shown in blue. If you change other percentages or add new ingredients, the balancing percentage will adjust to keep the total at 100%.

If the total of your ingredients adds up to more than 100%, the balancing percentage will be shown as a negative value. This means there is a mistake somewhere. Double-check your ingredient percentages to make sure they don't exceed 100% so your recipe calculations are correct.

Notes

  • Switching to percentage-based quantities replaces any weight-based quantities. Toggling back to weight-based quantities will convert the percentages to their respective gram equivalent.
