Nutrition Labelling
A reconstituted ingredient is a concentrated or dried ingredient that is returned to its original form by adding water, such as fruit juice concentrate or milk powder. When you declare a raw material as a reconstituted ingredient, Foodworks accounts for the water it absorbs in your recipes.
Before you start: adding water to your recipes
A reconstituted ingredient needs added water to absorb. You can either:
- create a recipe for the reconstitution, with the raw material and added water as ingredients, or
- make sure added water is somewhere in your final recipe's ingredient tree.
For added water, use a raw material with the Declaration name Water and a water content of 100g per 100g. Foodworks treats any raw material declared as Water as added water.
A reconstituted ingredient absorbs added water up to its reconstitution rate. If there isn't enough water in the recipe, it absorbs what's available.
Declare a raw material as a reconstituted ingredient
- Open the raw material and click Edit.
- On the General tab, from the Label declaration dropdown, select Reconstituted ingredient.
- In Declaration name, enter the name to appear in the ingredient list.
- In Statement (>5%), enter the statement to use when the raw material is 5% or more of the final food.
- From the Statement (<5%) setting dropdown, select what to show when it is less than 5% of the final food.
- In Rate, enter the parts of water per part of raw material. For example, if 1kg is reconstituted with 4kg of water, enter 4.
- Optional: In Ingredient group, select an existing group or type a new one. See About ingredient groups.
Changes save automatically. When you're ready, click Publish.
About ingredient groups
- Ingredient groups are categories you define, such as fruit or nuts, to group ingredients in a label's ingredient list. For example, if the raw materials cashews and almonds are both in the group nuts, they can appear on the label as nuts (cashews, almonds).
- When you type a new group name, it's added to the dropdown so you can use it for other resources.
- To use ingredient groups on a label, open the final recipe, click the Labelling tab, then select the ingredient group.
