You can turn on volumetric measures (such as cup, mL and L) for a raw material by entering its volume conversion factor (VCF), which is the weight of a given volume of the raw material. This is also known as specific gravity or density.
You can then enter the raw material by volume when you use it as an ingredient in a sub recipe or recipe.
Turn on volumetric measures
- Open the raw material and click Edit.
- On the Measures tab, turn on Liquid if the raw material is a liquid. This also turns on Volumetric measures and lets you view the analysis per 100mL. If the raw material isn't a liquid but you want to measure it by volume (such as flour), turn on Volumetric measures only.
- Enter a volume in millilitres and its weight in grams. For example, 100mL = 115g.
Changes save automatically. When you're ready, click Publish.
Tip
Check the supplier's product specification sheet for the specific gravity or other volume conversion information. If it isn't listed, weigh a measured volume of the raw material. For example, if 250mL of lemon juice weighs 258g, enter 250mL = 258g.
